::SPANISH:: Fairytale Pop-Up Dinner series w/ Chef Michelle Cross (vegan)

Following the fall equinox, let’s embrace the lasting summer heat with a dinner influenced by traditional Spanish cuisine. While enjoying these flavors of Spain, we’ll get a glimpse of a cuisine and culture so vivacious in spirit and filled with unrelenting romance. Honoring the late summer, early fall harvest, our dinner will be vegan with the exception of queso manchego making an appearance around the table. Otherwise, each course will be lovingly prepared local legumes and vegetables!
Join us at our table to feast, listen to the intoxicating Flamenco guitar, and attempt the porrón! Usually used for communal wine drinking, we will try out this festive vessel with a sangria made with seasonal fruits and iced tea instead of wine.

During dinner we will explore the fairytales native to Spain.

Gazpacho flight: white, green, & gold
Three shooters of yellow tomato gazpacho, avocado jalapeño, and traditional Spanish white gazpacho made with almonds, green grapes, and Jerez sherry vinegar

Bocados Pequeños
Little bites sampling savory treats pickled, brined, and fried

Non-traditional Forbidden Rice Paella
Black rice laced with red bell pepper and saffron. Taking place of the array of meat and shellfish in a true paella, we will have charred sweet onions, red beans, and toasted bread with fresh tomato

Churros with coconut caramel and dark chocolate

Dibon brut reserve or cava rosé (sparkling)

Michelle is a New Hampshire born chef and artist. While naturally developing artistic skills growing up, her mother was an ever-present influence in the culinary arts. This passion to feed friends and family turned into a 20-year career in various coastal restaurants and personal catering. Ten years in the beloved Ogunquit restaurant, 98 Provence, she learned about French pastry and bistro fare. Learning just enough of the French language, she was able to travel two months solo through Paris and Nice.
The Blue Moon Market (now Blue Moon Evolution), Aneke Jan’s, and Ristorante Mossimo are other establishments she spent time refining her craft.
As a member of Avalon North, she looks to connect with the community here, further enhancing a life of creativity and sustenance.

Jocelyn Toffic is the founder of Avalon North and also a New Hampshire born artist. She has spent much of her adult lifetime studying fairytales and mythologies of the world. In recent years she has been most consumed by Nordic mythologies and the Sagas of Iceland. Within these stories packaged so prettily some, and others so grotesque, is the root of our humanity. It is strange and primal and magical. It is everything modern ordinary societies would like us to suppress. We at Avalon resist. We believe Magic is real, and all around us. We keep the old ways. We speak the old stories.

But do not despair! Beginning Sep 1, non-members may purchase a $15 day pass which grants access to any of the day's activities or open club hours at the member rate
